



We believe great meals begin with ingredients that are real, healthy, and local, while being delivered using sustainable practices. Here are some principles that guide us every day.
Real Food from Quality Ingredients
Maybe it seems obvious. But when what makes it into our meals these days is often a chemical imitation of real food, we think it’s worth saying up front: we cook with the good stuff. Real cheese. Virgin Italian olive oil. Fresh produce in season. And, while sourcing them far from the mainland can be a challenge, we always use all-natural and organic ingredients whenever they are available.
Dine Near the Vine
Since much of what’s needed to run a restaurant in the middle of the Pacific has to be imported from the mainland, buying local has special meaning for us in Hawaii. That’s why we continually look for opportunities to buy all-natural products grown or made locally. If they’re also organically produced, even better.
We proudly use only all-natural, grass-fed, and hormone-free beef raised on island by Maui Cattle Company. We buy seasonal vegetables and herbs from local growers, and we work continually with our suppliers to expand our natural, organic, and local offerings.
Reducing Our Environmental Impact
Restaurants use a large quantity of disposable containers and cutlery for their take-out business, some of which can remain in landfills for decades. Pizza Paradiso has eliminated the use of foam containers in favor of biodegradable containers made from renewable materials, and we are currently phasing in disposable cutlery made from corn. To reduce packaging waste, we by salt, pepper, ketchup and other products in bulk instead of using single-serving condiment packets.

We’re always looking for ways to reduce our impact on the environment in ways that are both sensible and sustainable. We recently reduced the amount of energy it takes to operate our kitchen with some smart new equipment and installed energy-saving LED lighting in work areas. We continue to seek new ways to reduce other forms of waste.
