CHEF PARIS NABAVI

Pizza Paradiso is the creation of Paris Nabavi, a classically trained chef who saw a need for healthy alternatives to fast food on Maui. In 1995 he opened the original Pizza Paradiso, serving gourmet pizza by the slice at Whalers Village in Ka‘anapali. Since then, the location has changed and the menu has grown to include favorites from across the Mediterranean. Chef Nabavi's newest creation is Sangrita Grill and Cantina, a full-service Mexican restaurant and tequila bar. Real Food from Quality Ingredients

Maybe it seems obvious. But when what makes it into our meals these days is often a chemical imitation of real food, we think it’s worth saying up front: at Pizza Paradiso, we cook with the good stuff. Real cheese. Virgin Italian olive oil. Fresh produce in season. And while sourcing them far from the mainland can be a challenge, we use all-natural and organic ingredients whenever they are available.

Dine Near the Vine

Since much of what’s needed to run a Maui restaurant has to be imported from off island, buying local has special meaning for us. That’s why we continually look for opportunities to partner with local growers to supply fresh ingredients. If they’re also organically produced, even better. Pizza Paradiso proudly uses all-natural, grass-fed, and hormone-free beef raised on island by Maui Cattle Company. We buy seasonal vegetables and herbs from small farms, and we work constantly to expand our sources of natural, organic, and local offerings.

Reducing Our Environmental Footprint

Restaurants use a large quantity of disposable containers and cutlery for their take-out business, some of which can remain in landfills for decades. Pizza Paradiso has greatly reduced the use of foam containers in favor of biodegradable containers made from renewable materials. To reduce packaging waste, we buy salt, pepper, ketchup and other products in bulk instead of using single-serving condiment packets.

We’re always looking for ways to reduce our impact on the environment in ways both sensible and sustainable. Pizza Paradiso recently reduced the amount of energy it takes to operate our kitchen with some smart new equipment and installed energy-saving LED lighting in work areas. We continue to seek new ways to reduce other forms of waste.
